 Banana Chocolate Chip Cupcakes with Cream Cheese Frosting

Ingredients

 

¨  1 ¼ cups all-purpose flour

 

¨  ½ teaspoon baking soda

 

¨  ¼ teaspoon baking powder

 

¨  1 pinch salt

 

¨  ½ cup white sugar

 

¨  6 tablespoons lightly packed brown sugar

 

¨  ¼ cup unsalted butter, softened

 

¨  1 egg

¨  2 ripe bananas, mashed

 

¨  1/3 cup buttermilk

 

¨  ½ cup chocolate chips, or to taste (Optional)

 

Frosting

 

¨  1 (3 ounce) package cream cheese, softened

 

¨  3 tablespoons butter, softened

 

¨  1 teaspoon vanilla extract

 

¨  2 cups confectioners’ sugar, or more to taste

 

Directions

 

þ  Step 1

Preheat oven to 350 degrees F (175 degrees C). Line a muffin tin with paper liners.

 

þ  Step 2

Whisk flour, baking soda, baking powder, and salt together in a bowl.

 

þ  Step 3

Combine white sugar, brown sugar, and 1/4 cup butter in another bowl; beat with an electric mixer until creamy. Beat in egg. Mix in mashed bananas. Add flour mixture in 3 batches, alternating with buttermilk, stirring after each addition. Fold chocolate chips into the batter.

 

þ  Step 4

Spoon batter into the prepared muffin tin.

 

þ  Step 5

Bake in the preheated oven until toothpick inserted in the center comes out clean, about 20 minutes. Cool cupcakes on a wire rack, about 30 minutes.

 

þ  Step 6

Beat cream cheese and 3 tablespoons butter in a bowl until smooth. Add vanilla extract. Beat in confectioners’ sugar. 1 cup at a time, until frosting is smooth.

Spread frosting over cupcakes.

¨  2 pisang masak, tumbuk

 

¨  1/3 cawan mentega susu

 

¨  cawan coklat cip, atau secukup rasa (Pilihan)

 

    Pembekuan

 

¨  1 (3 auns) bungkus krim keju, dilembutkan

 

¨  3 sudu mentega, dilembutkan

 

¨  1 sudu teh ekstrak vanilla

 

¨  2 cawan gula gula, atau lebih secukupnya

 

 

Petunjuk

 

þ  Langkah 1

Panaskan ketuhar hingga 350 darjah F (175 darjah C). Gariskan timah muffin dengan pelapik kertas.

 

þ  Langkah 2

Tumis tepung, baking soda, serbuk penaik, dan garam bersama dalam mangkuk.

 

þ  Langkah 3

Campurkan gula putih, gula merah, dan 1/4 cawan mentega dalam mangkuk lain; pukul dengan pengadun elektrik sehingga berkrim. Pukul telur. Campurkan pisang tumbuk. Masukkan campuran tepung dalam 3 kumpulan, berselang seli dengan buttermilk, kacau selepas setiap penambahan. Lipat cip coklat ke dalam adunan.

 

þ  Langkah 4

Sudu adunan ke dalam tin muffin yang telah disediakan.

 

þ  Langkah 5

Bakar dalam ketuhar yang telah dipanaskan sehingga tusuk gigi yang dimasukkan ke tengah keluar bersih, kira-kira 20 minit. Kek cawan sejuk di rak dawai, kira-kira 30 minit.

 

þ  Langkah 6

Pukul keju krim dan 3 sudu mentega dalam mangkuk sehingga sebati. Masukkan ekstrak vanila. Pukul gula gula. 1 cawan pada satu masa, sehingga pembekuan lancar.

 

þ  Langkah 7

Sebarkan frosting ke atas kek cawan.

Rosemary- Roasred Chicken with Apples and Potatoes

Ingredients

 

¨  cooking spray

 

¨  2 tablespoons butter

 

¨  1 large onion, sliced

 

¨  salt,  plus more to taste

 

¨  4 teaspoons white sugar

 

¨  5 medium apples - peeled, cored, and cut into 1/4- inch slices

 

¨  1 pound Yukon Gold potatoes, cut into 1/4-inch slices

 

¨  2 tablespoons olive oil

 

¨  6 bone-in, skin on chicken thighs

 

¨  2 tablespoons chopped fresh rosemary

 

¨  ground black pepper

 

 

Directions

 

þ  step 1

Preheat the oven to 400 degrees F (200 degrees C). Spray the top and bottom parts of a broiler pan with cooking spray.

 

þ  step 2

Melt butter in a skillet over medium heat and add onion slices. Sprinkle onions with 1 teaspoon salt and saute for 2 minutes. Add sugar and continue cooking until onions are translucent but not browned, 6 to 8 minutes. Remove from heat.

 

þ  step 3

Layer apples, potatoes, and sauteed onion slices in the bottom part of the broiler pan. Cover with the part top of the broiler pan.

 

þ  Step 4

Drizzle olive oil over chicken thighs. Sprinkle with fresh rosemary, salt, and pepper. Rub olive oil and spices thoroughly all over each thigh and place on the top part of the broiler pan.

 

þ  Step 5

Roast in the preheated oven until juices run clear and an instant-read thermometer inserted into the thickest part if the thigh, near the bone, reads 165 degrees F (74 degrees C), about 1 hour. Serve apples, potatoes, and onion alongside chicken thighs.

Petunjuk

 

þ  Langkah 1

Panaskan ketuhar hingga 400 darjah F (200 darjah C). Semburkan bahagian atas dan bawah panci broiler dengan semburan memasak.

 

þ  Langkah 2

Cairkan mentega dalam kuali di atas api sederhana dan masukkan hirisan bawang. Taburkan bawang dengan 1 sudu teh garam dan tumis selama 2 minit. Masukkan gula dan terus memamasak sehingga bawang lut tetapi tidak berwarna coklat, 6 hingga 8 minit. Keluarkan dari panas.

 

þ  Langkah 3

Lapiskan epal, kentang, dan hirisan bawang tumis di bahagian bawah kuali panggang. Tutup dengan bahagian atas kuali panggang.

 

þ  Langkah 4

Taburkan minyak zaitun ke atas paha ayam. Taburkan dengan rosemari, garam, dan lada segar. Salutkan minyak zaitun dan rempah-rempah sehingga bersih di setiap paha dan letakkan di bahagian atas panci panggang.

 

þ  Langkah 5

Panggang di dalam ketuhar yang telah dipanaskan sehingga jus habis dan termometer yang dibaca segera dimasukkan ke bahagian paling tebal jika paha, berhampiran tulang, membaca 165 darjah F (74 darjah C), kira-kira 1 jam. Hidangkan epal, kentang, dan bawang bersama paha ayam.
